Chocolate muffins are loved by almost every one of us. I wanted to try my hands on muffins for long time, but could not decide on a recipe. I bookmarked a recipe but it had complicated measurements, so at last minute, I got a recipe and the recipe didn't disappoint me. It came out good. It tasted similar to the eggless chocolate cake. With simple ingredients, it does comes out sinfully delicious. It is very easy too, that beginners in baking, like me, can try it out without giving a second thought. The muffins were soft and chocolaty, do try it out yourself to believe me!

Recipe Cuisine: Continental | Recipe Category: Dessert
Prep Time:10 mins soaking time | Cook time: 25 mins | Makes: 8

Ingredients

All purpose flour - ¾ cup

Coco powder - 2 & ½ tblsp

Sugar - ½ cup

Baking soda( bicarbonate of soda) - ½ tsp

Salt - ¼ tsp

Oil - ¼ cup

Cold water - ½ cup

Vanilla essence - 1 tsp

Lemon juice / vinegar - 1 tsp

Method

    1. Sieve flour, coco and baking soda together tice to ensure even mixing and then mix in the salt and sugar. In another bowl, mix oil, cold water and vanilla. Reserve the lemon juice.Mix the dry ingredients and wet ingredients well until sugar gets dissolved.

    1. Pre heat oven to 190o C .. Before you are just going to bake, mix in the lemon juice and stir well. Spoon the batter to the muffin liners in the baking tray. Fill just ¾th.

    1. Bake for 25 to 30 minutes or until tooth pick inserted comes out clean. Better keep checking after 20 minutes. Mine got baked after 23 minutes itself. Cool down the muffins in a wire rack, after carefully taking out from the baking tray.

Notes

  • I used fine grain sugar, better to use it as it gets dissolved easily.
  • You can use ½ teaspoon of orange zest to enhance the flavour.
  • Bake a day before you want to eat.

    you can use vegetable oil or sunflower oil. I used sunflower oil.

    Lemon juice will just affect the texture of the cake. It will be still edible!

    Hi, i tried this recipe yesterday... It turned out the the top layer was baked but the lower part of the muffin was unbaked.. I baked it for some more time. Then the top layer got charred out but the lower layer was still unbaked..

    Basically i faced the problem of uneven baking of different portions of the muffin..

    Any idea what could have gone wrong? I have Godrej Microwave oven and i baked in Grill Convection mode for 20 minutes.

    Any inputs will really help me....

    You dont have any convection mode (alone)? If so try baking in convection mode itself. And also give some time for the cake to cool. If you check immediately , then it will be moist under.

    I am regular visitor / follower of the blog. It's just awesomely explained step by step. I like it a lot and makes cooking very easy.. I wont satisfy in cooking until the item turned out exactly the way you have shown in your pictures. 🙂

    As per your notes, these muffins taste good if baked a day before.
    I am wondering if do we need to keep these muffins in a the refrigerator if baked a day before. I am going try this baking for the first time, hence, wants to get this clarify... little confused. I wanted to bake this for my son's class party in next two days.

    Tried this chocolate muffin for my niece's 6th birthday(today). It came out exceptionally well. So soft and delicious. I couldn't believe that I baked this. My niece ate 3 already 🙂

    I have no idea how to incorporate that in this recipe. You can chop it and try making either choco chip cookies or choco chip muffins. You can also make hot chocolate with that.

    Since this is an eggless cake, vinegar or lemon juice is a must for getting soft texture. Vanila can be skipped.

    Hello, I tried the recipe exactly as mentioned. The cupcakes looked perfect when removed from the oven. The skewer inserted came out clean. But, when the paper was removed from the cupcake the bottom part was a bit sticky as if undercooked. Please tell me what went wrong.

    Have you given enough time to cool? Next time may be let the muffin be in the pan for 10 to 15 mins before removing it and then allow to cool in wire rack.

    Hi there, followed your recipe in all steps. Muffins were spongy and baked well but I have 2 concerns. 1. Sweet is very less (of course it depends from one person to another) but it also did not taste like the chocolatty ones. Tasted a little like chocolate and more like Vannila. 2. The texture was not smooth and moist like yours. It looked like dry, like other cakes(mine is a convection oven. I baked it in convection mode for 20 minutes which is how I bake all recipes and got desired results so far).

    So I got 2 questions. 1. should I add more cocoa powder to make it taste like chocolate & how much?? 2. should I reduce the baking time & see how it goes?? (given that convection oven supplies a lot of heat than otg)

    For 3/4 cup flour, 1/2 cup sugar is sure enough. And adding salt will more enhance the sweetness. Not sure why sweet was less for you. I used hersheys cocoa powder, try and see the same brand may be you get good results. Instead of vanilla essence, you can add a tsp of orange zest and see if you like it (only the orange skin scrapped in a fine grater, not the white skin). Baking time should not be an issue, if it's done, you can check and take it out.

    Lemon juice and baking soda is enough in this recipe. May be baking soda did not work properly, use a fresh stock. If the muffins has more water content or oven door opened before halfway, the muffins wont raise.

    Hi. Thanks for the simple recipe. Today is the first time I baked and after browsing for about 50 plus recipe I decided to go with yours as I found it simple with the ingredients at home.

    The cake had perfect taste in temrs of sweetness and moisture.

    I had the following problems

    Mine was a heart shaped cup cake tray. Thus no liners . Greased the pan with oil and poured the batter.

    After 18th minute , I wanted to check and inserted knife and pulled out. No stickiness and it came out perfectly. Thus thought the cake is cooked and removed it from the oven. But after cooling the muffins didn't come out perfectly. The top portion was little crispy and the bottom most i had to scoop out with spoon. When I ate I could it moist but it was sticking a little to teeth. Does it mean it is raw or something else is wrong ?

    Also the cake didn't raise fully beyond the tray level.

    As soon I made the batter (before putting lemon) power went off, thus i had to make the muffins after 2 hrs . Could this be the reason for my above mentioned problem??

      Hard crust could be because of two reasons. One is long baking time. Another one is too hot oven. Depending on the oven model, this could be varying. So next time reduce the temperature by 10 deg or reduce baking time. Keep checking once the baking time is past 3/4th time. Hope this helps.
