Today, we’re going to skip right over spring and pretend it’s summer. Sound good?
There’s so many things I love about summertime. I love the family gatherings, beach trips, and the warmer temperatures. But most of all, I love the flavors of summer – they are fresh and light! I’m already dreaming about grilled corn on the cob and a big ‘ol slice of watermelon that’s perfectly chilled.
The other thing I love about summer is that we usually take some time away and go on a tropical getaway. It could be close by or far away, but there’s nothing quite like digging your toes into the sand and listening to the sound of the ocean waves.
When I think of tropical flavors, two came to mind that I knew would be the perfect combination in this creamy and refreshing chia seed pudding – coconut and mango. It’s a match made in tropical heaven in my mind (and taste buds)!
The combination of the creamy coconut chia pudding layered with the sweet mango puree is a dish that is sure to impress and super simple to make. Not to mention, it’s full of nutrients, so you don’t have to feel guilty eating this sweet treat.
Mango Coconut Chia Pudding: Nutrition 411
The star in this ingredient and what makes this pudding, well, pudding are the chia seeds. These tiny seeds absorb up to 8 times their weight in liquid, creating a tapioca-like texturein thisrecipe.
Chia seeds are best known for these three standout nutrients:
- Fiber: promotes healthy digestion and keeps things movin’ as they should be. One serving (1 oz = 2 Tablespoons) contains 10 grams of fiber – that’s almost half of the recommended daily amount for women!
- Protein: one of your body’s sources for fuel, helps keep you feeling fuller for longer, and providesthe building blocks for cell production in the body.
- Omega-3s: Also known as “the healthy fats”, omega-3s are key for brain health(helping to keep you mentally sharp!) and can even aid in weight management.
The other star ingredient in this recipe that brings the tropical flavor to the party are the mangoes! Did you know that in 1 cup of mangoes, you’re getting 100% of your daily vitamin C needs? Mangoes are also a great source of vitamin A, folate and B vitamins.

Now that I’ve convinced you that this Mango Coconut Chia Pudding should be a staple in your household during the summertime, let’s get to the recipe, shall we?
This chia pudding is super simple to make and requires no cooking. Simply whisk the chia pudding ingredients together and place in the refrigerator to set while blending up some mangoes – that’s it!
If you don’t like the texture of coconut flakes (I know some don’t), you can omit them. No big deal. I hope you love this Mango Coconut Chia Pudding as much as we do around here!

Description
A great dessert, snack, or even breakfast, this Mango Coconut Chia Pudding is bursting with nutrients and flavor.
Ingredients

- 1 cup coconut milk
- 1 cup almond milk
- 1/3 cup chia seeds
- 1/3 cup unsweetened coconut flakes
- 2 Tablespoons maple syrup
- For the mango puree:
- 2 cups mango, cut into cubes
- 2 Tablespoons maple syrup
Instructions
- In a mixing bowl, whisk together the coconut and almond milk, chia seeds, coconut flakes and maple syrup until well combined. Place in the refrigerator for at least a few hours or until thick and of a pudding-like texture.
- Meanwhile, blend the mango and maple syrup in a blender on HIGH until smooth and creamy. Place in a container and refrigerate until ready to serve.
- To serve, layer the mango puree and chia pudding mixture in a serving dish. Be creative! Top with extra shredded coconut and mango.

Chia puddings are my go-to breakfast in the warmer months. I mix them up with seeds, nuts, coconut yoghurt and different fruit. We are lucky enough to have a mango tree in our backyard – score! – which takes chia puddings to a whole new level. YUM!
