So, I know you’ve all seen those super fun French Toast Roll Ups floating around the internet. If you haven’t, just don’t even bother looking.
I had this great idea to make some S’mores French Toast Roll Ups and I actually wish I would have taken some pictures of my results. I kind of felt like a guest on the Pintester. I’m not even sure if she’s tackled French Toast Roll Ups, but if she hasn’t, that should probably be her next project.
I like to think that I’m somewhat capable in the kitchen (and I like to think that you think that, too! ‘Cause otherwise….), but you guys — they were a hot mess.
Like hot hot, and a mess. Maybe I used the wrong kind of bread or something? I don’t know.
So I was totally bummed because I had no idea what I was going to bring to you. I wanted to do a fun end-of-summer-back-to-school breakfast/brunch/brinner and I thought I had the perfect thing.
And then I thought, “let’s just take that idea which was already awesome, and make it easy. Like, for real easy. And not just, ‘I’m a food blogger so I can make hard things look easy’ easy.”
Because apparently I can’t actually make French Toast Roll Ups look easy anyway.

Ingredients
- 8 slices whole wheat bread or whichever kind you like, toasted, chopped into 1″ pieces*
- 5 eggs
- 1 1/4 cup milk
- 1 tsp vanilla
- 1/4 cup granulated sugar
- 100 g milk chocolate bar chopped
- 1 cup mini marshmallows
- 1 graham cracker chopped (about ½ cup)
Instructions
Lightly grease an 8×8″ pan.
To the pan add the bread. In a medium bowl, whisk together eggs, milk, vanilla, and sugar and pour over bread. Cover with a piece of plastic wrap and let sit until egg mixture is absorbed (at least 4-5 hours or overnight).
Preheat oven to 350 degrees F. Uncover and bake for 30 minutes, until almost set.
Sprinkle with chocolate, marshmallows and graham crackers and bake for 5 minutes until marshmallows and chocolate are gooey. If desired, broil for no more than 1 minute to brown marshmallows.
Serve warm — no syrup needed!
Notes
I like to toast my bread before chopping it up — it helps the bread to absorb all of that liquid. This is totally optional!

So I had to look up French Toast Rollups, because I hadn’t seen them yet. They look pretty fun. But yeah, sort of messy. I’m definitely more of a “throw everything in one pan” kind of gal. This french toast casserole looks amazing!

Kitchen fails make my want to cry 🙂 But my gosh, this would solve any problem I had! This French toast casserole is my new kryptonite. French toast casserole plus melty chocolate has me weak in the knees. I can’t even, this is so genius!

Lol! Kitchen fails are the worst. This casserole looks so freaking amazing, though, so I think it turned out for the best… this has gotta be WAY better than roll ups! 😀 I want!!

Hi Stacey! We all have kitchen fails! I always just say “that’s the way it’s suppose to be”! Unless it’s just beyond redemption and then it gets tossed. This is sort of a cross between French toast and bread pudding – two of my favorites! The caramel and the apple crisp versions look pretty darn good too!

I hate when kitchen fails happen. But you came up with a delicious and fun casserole. Which in my opinion is way better. Something you can throw together the morning of or the night before, is my cup of tea!! This looks delicious and I wish I had a big slice right now! 🙂 Pinned!

Now this is my kind of breakfast!! It’s basically a dessert pretending it’s breakfast. All that chocolate! As for kitchen fails, they happen here ALL the time!! Most recently there was some super soft peanut butter nouget coated in some extremely hard caramel that ended up a super hard yet gloppy mess. Not even edible. That’s when you know it’s bad. Not that it just looks bad, it’s when you can’t even eat it!

I’ve had plenty of kitchen fails myself – in my case with stuff tasting so off – I am betting your french toast roll ups weren’t too bad tasting at all! And speaking of FT – this is one decadent version of it! So yum!

I’ve definitely more kitchen fails than I care to admit, so I feel your pain! But I’m so glad that the roll-ups didn’t turn out, because this casserole looks even better! Your pictures are SO gorgeous, Ashley! I’m so embarrassed to admit this, but I don’t like marshmallows! However, I do like them when they’re smashed up like this, so I just want to dive right into this! PInned!
