This post is quite overdue. I’ve been meaning to put all my ramen escapades in one place for a while now and I’m so excited to finally have a home for my oodles of noodles!

Whether you’re vegan, vegetarian, pescatarian, or simply a T-Rex who needs some extra meat-free dishes in your life – there’s something for everything here!

These vegan Tofu Ramen Bowls are big on flavor and packed with veggies! Mix and match toppings for your perfect bowl of ramen soup! This time around I added crispy baked tofu as well as some bonus noodles made of spiralized zucchini and carrot. YUM!

You can keep things mild with just a dash of Sriracha or embrace the heat by adding extra. The spice level is up to you! My idea of perfection is 2 glorious tablespoons plus an extra drizzle on top.

Ramen Bowl Tips and Tricks
I know ramen isn’t traditionally the healthiest thing on the planet, but over the years I’ve come up with a few hacks for amping up the health factor.
First up, the more veggies – the better! I love to add tons of veggie goodness to every bowl.
Best Vegetables for Ramen Bowls
- sliced green onion (scallions)
- thinly sliced carrots
- edamame (cooked + shelled)
- baby bok choy
- thinly sliced jalapeño
- garlic (fried or sautéed)
- mushrooms
- zucchini
- onion
- broccoli
- snow peas or snap peas
My Favorite Ramen Noodles for Ramen Bowls
Another healthy hack I use for my ramen bowls, is to use less authentic but totally tasty noodles that aren’t deep fried or loaded with additives.
They’reKA-ME Curly Noodlesand are a great healthier option for ramen bowls! These noodles are pretty easy to find and I’ve found them at Publix, Target, and on Amazon.
I don’t have easy access to fresh ramen, but you’d like to use fresh noodles for any of my ramen recipes, go for it!
